Oatmeal Cookies... Scotland

Originating in England, oatmeal cookies have been around since the 1800s. However, it is believed that they were created after the oatcake. Soldiers used to carry oatcakes with them for a quick boost of energy during battle. Most research found that the first recorded oatmeal raisin cookie recipe was written by Fannie Merritt Farmer in 1896. Considered a health food, the cookies quickly became popular. By the early 1900s, a recipe for the delicious treats appeared on containers of Quaker Oats. Oatmeal cookies are an excellent source of iron and fiber.


Oatmeal Raisin Cookie


Ingredients

• 1 cup all-purpose flour, spooned and levelled (150g)

• 1/2 teaspoon baking soda

• 1/2 teaspoon baking powder

• 1/2 teaspoon salt

• 1/2 teaspoon cinnamon

• 1/2 cup coconut oil or butter, melted

• 3/4 cup packed brown sugar (75g)

• 1 large egg

• 1 large egg yolk

• 2 teaspoons vanilla

• 1 1/2 cup whole rolled oats (not to be confused with quick oats)

• 3/4 cup raisins (dried mixed fruit)

• 1/2 cup chopped almond nuts, optional


Instructions

1. Preheat the oven to 180°C and line two baking trays with parchment paper.

2. Combine the flour, baking soda, baking powder, salt, and cinnamon in a large bowl. In a separate bowl, whisk together the melted coconut oil, sugar, whole egg, egg yolk, and vanilla, whisking vigorously.

3. Stir the wet ingredients into the dry ingredients. Stir in the oats, raisins, and nuts (if using), folding into a tight batter. Set the dough aside for 20 minutes while the oven preheats. (Note: if your dough seems too wet to become scoop-able, chill it in the fridge for this 20 minutes and it'll firm up). If your dough is too crumbly, stir in 2 to 3 tablespoons water.

4. Scoop into 20 tablespoon-sized balls and roll lightly in barely floured hands to make them round. Spread out onto the prepared baking sheets and bake until puffed, golden, and a touch under-baked-looking, 10 to 15 minutes. Let cool completely on the trays for 5 minutes.
