Peanut butter cookie... American

The earliest documentation of the existence of peanut butter cookies, which are an American invention; dates back to the early 1900's. This was when an educator – George Washington Carver, passionately began advocating that the farmers shift away from the cotton crop, following a heavy boll weevil attack on cotton. He compiled 105 peanut recipes from various cookbooks, agricultural bulletins and other sources. In his 1925 research bulletin called “How to Grow the Peanut and 105 Ways of Preparing it for Human Consumption”, he included three recipes for peanut cookies calling for crushed or chopped peanuts. It was not until the early 1930s that peanut butter was listed as an ingredient in the cookies.


The Peanut Butter Cookie


INGREDIENTS:

• 1 1/2 cup all-purpose flour (180g)

• 1/2 cup butter unsalted, room temp (113g)

• 1 cup peanut butter (Skippy will do just fine) (250g)

• 1/4 cup brown sugar (50g), lightly packed

• 1/4 cup sugar (50g)

• 1 tsp vanilla extract (5g)

• 1 egg large, room temp

• 3/4 tsp baking powder (3g)


INSTRUCTIONS:

1. Preheat over to 180C

2. Sift flour and baking powder together then whisk to combine.

3. Mix butter and sugars in a bowl till soft and fluffy. You can add an optional 1/4-1/2 tsp salt.

4. Add peanut butter and mix until incorporated.

5. Mix in egg and vanilla extract then add flour mixture and mix until incorporated.

6. Roll dough into one inch balls and place on baking sheet lined with parchment paper.

7. Flatten cookies with a fork in a crisscross pattern.

8. Bake cookies for about 10 minutes.

9. Allow cookies to cool completely on baking sheet, they need to set up before being transferred.
